漁師が「脱走マグロ」と呼ぶ、養殖いけすから海に逃げたとみられるクロマグロが各地で漁獲され魚市場に登場。天然物に近い締まった食感を兼ね備えた上質魚もいるため、注目され始めているという記事内容だ。

「脱走マグロ」は、運動量が増えるため、歯応えなどの食感が養殖物より向上しているうえ、餌に由来する養殖魚特有の臭いも薄く、築地の仲卸業者が太鼓判を推すほどに美味なのだという。
