北欧の海藻「ダルス」は、500億円市場になる可能性を秘めたスーパーフード

ビタミンC・抗酸化物質・タンパク質などが豊富に含まれている海藻「ダルス」。新スーパーフードとして、アメリカで大量生産する計画が進んでいる。

北大西洋や北太平洋に生息し、北欧諸国で昔から食されている海藻「ダルス」は、ビタミンCや抗酸化物質のほか、タンパク質が豊富に含まれるスーパーフードだ。しかも焼くとベーコンのような味がするという。

オレゴン州立大学の研究グループが、このダルスに注目しアメリカで普及させることを計画している。

ダルスを普及させる上で問題になっていたのは、育てるのが難しいということだ。そこでオレゴン州立大学のハットフィールド海洋科学研究センターで水産学を教えるクリス・ラングドン教授は、通常よりも速く確実に成長する新種のダルス「C3」を開発し特許を取得した。プレスリリースの中でラングドン教授は、C3は「これまでに報告されていた速度を上回る」早さで、ダルスを育てることができると述べている。

このアイデアを思いついたのは、オレゴン州立大学経営学部の講師を務めるチャック・トゥームズ氏だ。トゥームズ氏はオーガニック食品店でダルスが1ポンド60ドル(約454グラムで約7500円)で売られていると聞いて、早く成長するダルスを作ることを思いついたという。

彼は、栄養価が高く健康野菜として知られる「ケール」とダルスを比べ、こう話している。「ケールはあまり美味しくありませんが、それでも社会現象になりました。だからダルスもケールのようなブームになるはずだと直感したんです」

トゥームズ氏は、オレゴン州立大学フード・イノベーション・センターのマイケル・モリッシー氏と、料理研究家のジェイソン・ボール氏の協力を得て、新種のダルスを使って作る食品を考案中だ。

これまでに、ダルスを使った海藻せんべい(トゥームズ氏はこのせんべいは「チップス市場を席巻する可能性がある」と期待している)、トレイル・ミックス、ジャーキー、サラダドレッシングなどを作った。

サラダドレッシングは、地元では9月7日のアメリカの祝日「レイバー・デイ」までに、他の地域では2年以内に発売される予定だ。トゥームズ氏は、ダルス製品がいずれ、4億ドル(約500億円)の売上をもたらす可能性があると考えている。

すでに、ダルスを料理に取り入れているレストランもある。ニューヨークの人気レストラン「ACME(アクメ)」の総料理長でデンマーク人のマッズ・レフスルンド氏は、10年前から店でダルスを使った料理を出している。

レフスルンド氏によれば、アイスランドやアイルランドでは乾燥させたダルスをスナックとして食べることもあれば、ソースやスプレッドにすることも多いという。それは、アメリカ人がチップスや生野菜を食べるスタイルとほとんど同じだそうだ。

他にも、パンに入れたり、ラムの肩肉を包んで焼いたりするのもおすすめだそうだ。パンに入れると適度な塩味が出て糖分とのバランスがとれるという。レフスルンド氏いわく「肉や魚をダルスで包んで乾燥熟成させると、食材に風味だけでなく色味も添えるため、素晴らしい仕上がりになる」そうだ。

だが、新種のダルスが店頭に並ぶのは数年後になりそうだ。トゥームズ氏は「調査の結果、普通の野菜のように購入してもらえるほど、消費者のダルスへの関心が高くないことが分かりました。しかし、消費者はダルスを徐々に受け入れるようになるでしょう」と話している。

ケールの2倍の栄養があるベーコン味の海藻チップスを、数年のうちに食べられるようになるかもしれない。
