米国の食料品スーパーマーケットチェーン、トレーダー・ジョーズ社の元社長であるダグ・ローチ氏が、マサチューセッツ州ドーチェスターに来年開業しようとしているものだ。

このプロジェクトは「The Daily Table」(デイリー・テーブル)と名付けられており、果物や野菜、インスタント食品が販売される。食料雑貨店とレストランとを合わせた店舗を計画している、とローチ氏はNPRのインタビューに対して答えている。

ローチ氏はこの着想を、人々が毎日大量の食料を廃棄しているという現実に対する問題意識から得たと語る。2012年に米国自然資源防衛協議会(NRDC)が行った調査によれば、米国の住民は毎年食料の40%を廃棄している

一方、今年の9月には、NRDCとHarvard Food Law and Policy Clinicが、「賞味期限の表示は厳密なものではない」という調査結果を発表している。同調査では、表示されている賞味期限が消費者の誤解を招き、食べてもまったく問題のない食品の多くを廃棄させてしまっていることが明らかになったという。

安価な食品の多くは健康に悪影響を与える恐れがあるが、The Daily Tableではボストン市周辺地域で生活する低所得者向けに安全な食品を販売する、とローチ氏は『Boston Globe』紙で述べている
